Short version:

Kinsey 5 (I think she could like a guy, but it's not super likely because girls are so much wonderful).
She's probably a switch, in a very gentle way, but I really haven't thought that through because, well, cartoon for children.
As shipping goes: yes to Scorpia (and if we're playing post-canon I'm going to assume their relationship unless told otherwise, including in gen threads with other characters), yes to Mermista, probably yes to most of the other princesses but not Frosta because she's baby.
